The season of elderflower is among us!❤ You probably already know how to make elderflower syrup so you can enjoy it with some prosecco and a bit of mint (Hugo anyone?). But the wonderful flowers of the elderflower can also be used to bake amazing cakes.
I initially heard about elderflower cake around two years ago. I was somewhere in the countryside of Milan and I met a sweet Italian grandmother who agreed to bake a cake with me. As a passionate baker, you can imagine how happy I was to have this opportunity. The whole process was really interesting as she was just throwing things together which somehow worked really well. I was still dreaming about the cake when I arrived home and I was a bit sad that I did not manage to get the improvised recipe. This year, we had some elderflower and after making some syrup (or elderflower cordial in fancier terms), I remembered about the yummy cake. I searched for recipes but noticed that most of them only use the syrup and not the flowers. I finally managed to find a recipe that I tweaked a bit and this is how this delicious cake was baked.
The newbie herbalist in me was curious to find out more about elderflower and its benefits on the body. I was really surprised to read that it can help with flu symptoms as well as with joint pains and inflammations. The more I read about plants these days, the more I am amazed of how we can take care of our bodies and try to prevent some of the chronic illnesses our modern society is suffering from. I am still drooling when I see the pictures. The cake has such a fluffy, lemony, elderflowery flavor like no other. And the white chocolate is the perfect addition to it.
